Puds!


This is not what I had for pudding tonight (esp not after my baking feast with Genny!!) but I made it for a BBQ a few weeks ago and wanted to share it with you. I know it's a dark photo but you can find various versions in recipes around town - I saw a picture in a TASTE magazine some years back - so that's where this one comes from. Take some little meringues (I used store bought but you could make them) and pile them on a platter with whipped cream, fresh raspberries, rose turkish delight and roasted almonds - DELISH! It went faster than the Cointreau fruit salad - even with the boys. There are heaps of variations - pomegranate & pistachios or strawberries & grated white chocolate would be nice, or maybe raspberries with lime zest...
